The brewery history

The name Tieden-Bräu stems from "Old Northern German" language. "Tieden" means "times" and time plays an important role in brewing. The brewing day should be well prepared. Malt, yeast that is as vital as possible and the right hop varieties must be available. The malt is freshly crushed one day in advance and the brewing water is prepared days before, depending on the beer style. After brewing, the main fermentation process follows in the fermentation tank and then the secondary fermentation in the bottle or keg. So it takes a lot of time and patience until the result is in the glass and you can spend good times ("tieden") with your family, friends and neighbours or even alone. In addition, a lot of time had to pass, exactly 50 years before I discovered this hobby for myself. The cherry on the cake is that the first three letters can also be found in my last name.

But from the beginning: Actually, it all started in 1982. I had my first beer with my father (under protest of my mother). It was probably a "Ratsherren", "Holsten", "Dithmarscher" or any other Pilsner from the north. In any case, the order "a beer please" soon became the standard, whether after tennis or with friends on the "Piste" in Hamburg.

The first time I got in touch with self-brewing was in 2002 during my 2 1/2 year stay in Los Angeles. My colleague at the time, Timon, had invited me to brew a wheat beer. 32 degrees in the shade, a wonderful pool and a first-class barbecue were actually the best conditions - but the brewing didn't reach me at that time.

It was not until 13 years later, at Christmas 2015, that the initial spark came: The family had been celebrating Christmas Eve the First time for a long time, including the appendix. There where usually no presents among the siblings. Somehow the idea arose that everyone would draw a name by lot and then give this person a gift for a maximum of € 50. My sister drew my name and she got me a Starter Brewing set (original price € 75) on Ebay for exactly € 50. The sellers of this set had already grown and sold this package that was no longer needed (I should have been warned).

On January 7th, 2016 I brewed my very first beer. After 5 weeks, the first tasting was so delicious that I then brewed again and again with the set. However, always only 4 liters, with 6 hours of work in the kitchen. With a second starter package (I bought it myself) I brewed 8 liters in 8 hours on the stove with two pots, time-stiftet! Pure stress - not only because of the complex timing with two pots. Then a decision had to be made: "either right or not at all", after all I am not a homeopath and I wanted to have a real drink with my friends . Stopping wasn't really an option at all ... so then I need to do it right ...

You can really buy the equipment you need to brew a good beer for very little money. But somehow I had a wish for something nice - besides, I didn't want to spend the whole day in the basement and leave the family alone for many hours. The system should also be able to work alone. So the eye fell on the "Braueule". Not cheap, but coincidentally my 50th birthday was approaching. To be sure, I then booked a brewing course on the "brewing owl" and was then completely convinced that this was the right decision.

It was also my sister who took care of my logo. She happened to pass on her FC St. Pauli (German Second league Football Club) season ticket to a graphic artist. Since this card naturally has an ideal value in addition to the actual monetary value, he was now ready to create a logo for me. After completion, I had the name and logo registered and protected at the trademark office.

... to be continued ...
